3 Easy and healthy food ideas for new parents

Once kids came in the picture easy and healthy food ideas for new parents on the go became an essential. I wish that I had a plan or some ideas to go by when I started out. Instead we existed on frozen lasagnas, pizzas and subs for about a month or two. But I have learned some tips along the way and would love for other parents to have this knowledge to make their lives easier and healthier.

I have always been a health conscious person, pretty avidly, and liked to follow the seven fruits and vegetables a day Australian food guide. The more colorful and varied the food the more joy it gives me. I also love fresh food. But, honestly, with children who has the time to prep fresh food every day? I know that I didn’t and don’t.

So I want to help other parents with 3 easy ideas for grab and go food that will leave you feeling confident that you are eating healthy and fresh.

1) Quinoa salads

Quinoa salads is such an awesome versatile option because you can literally put your favorite vegetables, spices and dressing mix with quinoa and eat out of the refrigerator for the next 3 days for lunch, or snack, or with dinner. I love this option. My preferred way to do it is with a olive oil, honey, apple cider vinegar, Dijon mustard and parsley. Then I mix quinoa, chickpeas (for protein), cucumbers, avocado, peppers add the dressing and done!

2) Bean salads

Make a classic easy bean dip or bean salad with pickling dressing (my preferred is 1/2 cup vinegar, 1/2 cup oil, 1/2 cup sugar, pinch of salt). I then add 1 can of kidney dark beans, 1 can of chickpeas, 1 can of waxed cut green beans, 1 can of waxed cut yellow beans, one diced pepper and one diced onion. Mix it all together and it lasts in the fridge for 6 days! Try this recipe or use your own favorite option for a versatile snack or dinner side with all essentials (protein, legumes, veggies).

3) Cut the guilt, this is a season

So I also had to change my rules about food prep. I now allow myself to pick up a veggie tray, a fruit tray and a premade salad from the store and there you go fresh prepared food. Or I pick up some hummus and a few cucumbers or even better baby carrots. Or have some frozen fruit, yogurt and spinach available for a quick smoothie. Get creative. And most importantly remember to have fun with it.
